Indian Cooking Tips: How To Make Ajwaini Paneer – A Spicy And Flavourful North-Indian Sabzi

That brick of paneer always present in our refrigerator can be turned into infinite Indian dishes. We just can’t get enough of shahi paneer, matar paneer or kadhai paneer. But, if you are still looking for more interesting paneer sabzi options, get down to cooking this delicious paneer ajwaini sabzi. This paneer dish is popularly made in northern part of India, especially in Punjab and Haryana. This little piece of information gives away the fact that ajwaini paneer will be rich and full of flavours.

Soft and tender paneer is flavoured with ajwain (carom seeds). This Indian spice emits a strong aroma and adds in a distinct pungent favour that instantly lifts up any dish it is added to. On the other hand, the ability to fully absorb flavours of other ingredients is the strong-suit of paneer and this paneer dish proves it yet again.

Step-By-Step Recipe of Ajwaini Paneer

Ingredients –

200 gms paneer, cubed
2 tomatoes
1 onion, chopped
1 green chilli, chopped
Half tsp ajwain
1 tbsp curd
Half inch ginger, chopped
4-5 cloves of garlic, chopped
Half tsp turmeric powder
1 tsp coriander powder
Salt to taste
Red chilli powder
1 tsp garam masala powder
1 tbsp lime juice
Coriander leaves for garnishing

Method –

Step 1 – Crush ajwain seeds to powder them. Make a puree of tomatoes and ginger.
Step 2 – Heat ghee in a pan. Saute onion, green chilli and garlic.
Step 3 – Add tomato puree, salt, ajwain powder, coriander powder, red chilli powder and turmeric powder. Cook the puree till it starts leaving oil.
Step 4 – Now add curd and saute for a minute. Add some water and let it boil.
Step 5 – Add paneer cubes and garam masala and mix well.
Step 6 – Turn off the stove. Add lemon juice, garnish with coriander leaves and serve.

The flavour of ajwain will shine through in this Indian paneer dish. It is easy to make, tastes great, and that’s why – is a must-try.
