Indian Cooking Tips: Use Leftover Seviyan To Make Seviyan Ki Barfi; Here’s How

Bakrid and Raksha Bandhan kick-started the much-awaited festive season and we are already looking forward to impending festive celebrations lined up for the rest of the year. No Indian festival is complete without stuffing ourselves with some traditional Indian sweets. For as long as we can remember, we have relished all those rich sweets every single time there is an occasion among family and friends. Although, we love the traditional laddoos and barfis our mothers have been making all this while, sometimes, we just crave for something different; at those times – pick this seviyan ki barfi recipe.

Seviyan (or vermicelli) is always present in our kitchen. We can use it to make sweet seviyan or savoury breakfast meal. The same seviyan can be used to make barfi, which is soft, rich and super yummy. Just like you make meethi seviyan, you cook seviyan in the same way with milk and sugar. You just have to thicken the mixture enough so that it can be turned into barfi when cooled down. You need the same ingredients, except khoya to make seviyan ki barfi. It is easy to make and takes only 20 minutes to cook. You can also use your leftover seviyan to make barfi when you’ve had enough of the sweet seviyan and a lot of it is still left untouched.

How To Make Seviyan Barfi –

The barfi is made by first roasting seviyan till it is fragrant and changes its colour. Then saute the roasted seviyan for a minute in ghee and boil it in milk. Don’t forget to add sugar and some khoya while the seviyan is cooking in milk. Khoya adds creaminess and richness to any sweet it is added to. If you don’t have khoya at home, don’t worry – you can easily make it at home too. All you need is full cream milk and then make khoya with this easy recipe.

Coming back to our barfi preparation – when the seviyan is cooked and turns soft, check if its mixture is of thick pouring consistency. Cook further till you get it. And, that’s it. Pour the mixture in a barfi tray, sprinkle dry fruits like almonds, pistachios and raisins, and let the barfi cool and set at room temperature. Cut it into square pieces and serve.
